If you enjoy eating healthy, but are getting bored with the same ol' vegetable options, consider broccolini. Broccolini is similar to broccoli but it has longer stems and smaller florets. But it's broccolini's sweeter flavor that makes it really stand apart from broccoli. And since it's more tender, it requires less cooking time too.

With broccolini recipes, you can keep it pretty simple -- allowing the delicate flavors to shine through. This recipe quickly blanches and then light sautés the broccolini with shallots. Topped with toasted bread crumbs, it makes a side dish you can be excited about.
