The Newest Locavore Craze: Micro-Distillers

The locavore craze shows no sign of slowing down. The latest explosion? Micro-distilleries. Four are slated to open in the Chicago area by the end of the year, joining one that opened last month. That brings the number of craft distilleries in Illinois to 20—up from just a dozen in January.

For a while, there were only three major local players: Koval Distillery in Ravenswood, Few Spirits in Evanston and North Shore Distillery in Lake Bluff, established in 2004 as the first legal distillery in the state since Prohibition's repeal in 1933.
